. . .everything's a little topsy turvy right now
despite my efforts to keep the POVS fed, they have refused my latest offering (not quite as pictured, but near enough) (for some reason people seem to think that one has to insert maracino cherries into the centre of the pineapple rings - I never make my cake that way but found it hard to find an image of one without the little red splodges)
so, there's some spare if anyone would like a slice (gluten free and also vegan)

Gosh--I haven't had an upsidedown pineapple cake forever......
This is my favorite cake, really, it is. I DO use the cherries in mine. I use the Fannie Farmer recipe. I want to make one. I'm traveling this weekend, so maybe next week.
Yours looks beautiful. I bake mine in a regular old well seasoned cast iron skillet. Looks like you used something similar as the edges seem to be nice and brown, almost crispy. I want some!!

sorrow it was tasty (well, I liked it!) and I'm not sure what a blonde brownie is either
man I'll be making it a staple, whether the children join me in a slice or not! I used fresh pineapple chunks, so mine didn't look quite like the one pictured, and then I drizzled the warm cake with the juice and sprinkled on a little icing sugar which kind of set in a crispy crust on the cake
