to a toffee apple!
- cover a baking tray with a large sheet of greaseproof paper;
- wash and dry 8 apples (I use Pink Ladies!) and insert wooden skewers into their cores;
- combine half a cup of water, two cups of white granulated sugar and half a teaspoon of vinegar in a small heavy based pan; bring to the boil (add the food colouring if you're using it);
- heat the mixture to 150C (I'm sure you all have a sugar thermometer, don't you) and simmer for about 20 mins;
- remove the pan from the heat and allow the mixture to stop bubbling;
- dip the apples, one by one, into the mixture;
- rotate each apple so that it is evenly covered in the syrup, let it drain a little then place on a baking tray covered with greaseproof paper to cool down and harden. . .

You'd better chip the toffeee off mine. Throat is too sore. Also the snog will have to remain on hold for a bit longer. My Gp thinks I have glandular fever.
