actually, someone once showed me a neat trick with a satsuma: you peel the skin very carefully back from the top, leaving that little pointy bit of pith sticking up from the bottom of the inside of a semi-sphere of peel, then you fill the semi-sphere with olive oil and light the pith - which acts as a wick!
